PURPOSE:To enable the sufficient fermentation treatment rapidly, by supplying the exhaust gas exhausted from the outlet side of a fermentation tank and having high CO2 concentration to the material to be fermented and having high pH value only when the pH of the material at the feeding side of the fermentation tank is >=9.5. CONSTITUTION:The materials A1, A2 supplied from one end 3 of the fermentation tank 2 is taken out of the tank from the other end 4. In the above fermentation process, the pH or the temperature of the material A1 to be fermented is measured at the feeding side of the tank 2 to determine whether the pH of the material A1 is >=9.5 or not from the measured pH value. When the pH is >=9.5, the exhaust gas having high CO2 concentration and obtained from the outlet side 2b of the tank 2 is supplied to the material A1 having high pH value. A sufficient fermentation treatment can be carried out rapidly by this simple and economical process.
