PURPOSE:To prepare a moldable jelly material having heat resistance, by blending a solution containing a saccharide and an acid with a solution containing lower methoxyl pectin to form a jelly material having the desired shape, immersing the jelly material in a solution containing a polyvalent metal ion. CONSTITUTION:A solution containing a saccharide (e.g., sugar) and an acid (e.g., citric acid) is blended with a solution containing lower methoxyl pectin to form a jelly material having the desired shape, and the prepared jelly material is immersed in a solution containing a polyvalent metal ion (e.g., Ca ion, or Mg ion). The jelly material thus obtained has any of various shapes, for example, it will not melt even if it is dried at 200 deg.C, and it will not melt even it is heated at 130 deg.C for 30min under pressure and it has improved gel texture, so it is advantageously applicable for processing foods in various kinds of shape by using its shape. |
