PURPOSE:To produce paste usable as a raw material of foods having high nutrient value, by converting adlay and barley completely to alpha-form, and pulverizing the product. CONSTITUTION:Polished or whole adlay is washed with water, soaked, heated and dried to increase the alpha-starch content by 10-20%, and is mixed with polished barley at a proper weight ratio, e.g. 3:7. The obtained mixture is charged into a puff machine, kneaded under high temperature and pressure, and released into the atmosphere to effect the expansion of the grains and the complete conversion of the starch to alpha-form. The produced porous expanded product is pulverized to obtain the objective paste. |
