PURPOSE:To obtain dried Japanese horseradish (Eutrema wasabi Maxim) having extremely excellent preservability, without losing the characteristic properties of Japanese horseradish, by immersing the Japanese horseradish in chilled saline water, and freezing and vacuum-drying the product, thereby completely exterminating Phoma wasabiae in the horseradish. CONSTITUTION:The surface of the harvested Japanese horseradish is rubbed with chilled water of about <=15 deg.C to clean and activate the horseradish, immersed in chilled saline water of <=0 deg.C, preferably -3--7 deg.C for a short time, freeze-dried quickly, and dried in vacuum without thawing to a water content of 4-6%. |
