摘要 PURPOSE:To prepare a fibrous food, by thrusting a tool furnished with a plurality of needle-like parts into a cooked edible product having elasticity, thereby incising the product in the form of fibers. CONSTITUTION:A raw material which can be made edible with heat (e.g. pastry raw material of fish meat ham) is heated to obtain heated edible product having elasticity. The product is thrusted with a tool furnished with a plurality of needle-like parts to incise the product in the form of fibers and produce a fibrous food. For example, the taste and flavor component of cuttlefish is added to a raw meat composed mainly of fish meat, the resultant finished ground meat is formed to the thickness (e.g. 0.5-1cm) and size (e.g. 10cmX5cm) corresponding to the opened cuttlefish, and the product is heated at 75-95 deg.C to obtain heated ground meat. The ground meat is thrust with a tool furnished with a plurality of needle-like parts suitable for the preparation of cuttle-like fibers, and incised in the form of fibers. A KAMABOKO (steamed fish-paste) having similar texture to cuttlefish can be prepared by this process.
