PURPOSE:To obtain a food having high nutritive value and excellent resistance to the teeth, palatability, savor, and appearance, by cutting a block of seasoned bean curd into a number of small cubes, and embedding the cubes in jelly. CONSTITUTION:A seasoning liquid selected according to the taste and a gelatin solution prepared by mixing and dissolving gelatin in water are charged into a definite container, e.g. foamed polystyrene container 1 to about 30% of its volume. Separately, a block of bean curd is seasoned with proper amounts of seasonings according to the taste of the consumer, cut into a number of small cubes 2, and charged into the above gelatin solution at a ratio of about 70% of the capacity of the container. The container 1 is covered with the top cover 3 made of the same material as the container, and sealed by heat welding. The content in the container 1 is heated at 80 deg.C for 40min to effect the gelatinization of the gelain and sterilization of the product. When the container is cooled, the bean curd cubes 2 are precipitated to the bottom of the container 1 and the gelatin is coagulated to jelly 4. Bean curd embedded in jelly and having high nutrient value and excellent savor and appearance can be produced by this process. |
