PURPOSE:To prevent the degradation and putrefaction of the core part of the titled food during the preparation process, and to obtain the product having uniform quality, by freezing and forming only the core part, and wrapping the core with the shell. CONSTITUTION:A pasty semisolid core of giaoz, meat-bun, piroshki, etc. is frozen to a proper form, and the solid is wrapped with a shell. A core having high water-content can be wrapped with a soft shell without necessitating skilled labor. |
