Vital gluten is disclosed having an enhanced content of monoglycerophospholipid e.g. 30 mol % or more of the total phospholipid content, as well as processes for the production thereof and use thereof as an improved food improving agent. The novel vital gluten is obtained by enhancing the monoacylglycerophospholipid content relative to the diacylglycerophospholipid content, e.g. by treating the wheat flour dough used to obtain the vital gluten, with phospholipase A thereby to convert endogenous diacylglycerophospholipid enzymatically into endogenous monoacylglycerophospholipid. Further enhancement can be obtained also by adding exogenous mono or diacylglycerophospholipid to the dough. |
