In the formula either R 1 is hydrogen and R 2 is isopropylidene or isopropenyl, or R 1 and R 2 together are dimethylmethylene. The aldehydes are 2-formyl-1-isopropenyl-3-methyl-cyclopentane (photocitral A), 1, 6, 6-trimethyl-bicyclo(21.1.)hexane-2- aldehyde (photocitral B) and 2-formyl-1-isopropylidene-3-methyl-cyclopentane, and their stereoisomers. The composition can be used in yoghurt, puddings, sweets, ices and beverages, and may be in-liquid, paste or powder form. |
