<p>Polyglycerol esters are made readily dilutable with fats or oils and/or water using simple mixing techniques by first forming an alpha crystalline gel concentrate of the ester, fat or oil, and water. The concentrates are stable for prolonged periods and even when diluted with fat, oil or water, remain stable. The concentrates also exhibit markedly enhanced functionally in end use applications.</p> |
