Process for the production of sugar crystals from sugar liquors consisting in supplying a continuous operation evaporation crystallisation apparatus 10 with the liquors to be treated and a seeding magma formed from a mixture of syrup and crystals, in extracting from this apparatus a massecuite which is strained in order to separate the crystals from the mother liquor, and in refining the separated crystals by mixing them with a syrup of greater purity than that of the said mother liquor and by straining this mixture in order to separate the refined crystals from the refining run-off. In order to produce the seeding magma continuously and economically, the refining run-off and crystals arising from the dedusting device 24 of a plant for drying sugar are mixed. <IMAGE>
