Drying processes in the production of foods serve to prevent the development of harmful microorganisms. The drying process has hitherto been monitored in that samples to be analysed were removed from the foods in a time-consuming and expensive manner. Using the apparatus (10) proposed here, a hollow body (11) of the apparatus (10) having an opening (14) formed thereon is brought against the material (16) to be dried, a probe (13) in the interior (12) of the hollow body (11) determining the moisture level prevailing in the material. <IMAGE>
