PURPOSE:To prepare rice free of broken rice grain, having improved preservability, and suitable for brewing Japanese SAKE, by cleaning rice to a yield lower than a specific level, controlling the water-content of the polished rice, drying and hardening the surface layer of the rice grain with hot air, irradiating the grain with electromagnetic wave to effect the rapid heating and evaporation of water in the core part of the grain, and carrying out the secondary drying of the rice with cold air stream. CONSTITUTION:Polished rice polished in the rice-cleaning chamber of the rice- cleaning apparatus 2 to a yield of <=80% is introduced into the conditioning apparatus 5, and the rice falling down in the conditioning chamber 6 is moistened with humid air generated 9, introduced 7 into the conditioner and exhausted 8 therefrom. The rice conditioned to a water-content of about 15-16% at the core part is sent to the primary drier 11 to effect the drying and hardening of the surface layer of the grain with hot air generated 12 and introduced into the drying chamber, and then the treated rice is transferred to the apparatus 14 for the electromagnetic wave irradiation, in which the rice is irradiated with electromagnetic wave in the range from short wave to microwave to heat and evaporate the water in the core part of the grain. The treated rice is introduced into the secondary drier 18, and dried to a desired water content with supplied (19) low- temperature air of normal temperature - about 60 deg.C, and the product is discharged from the apparatus and sent to the next step. |
