PURPOSE:To prepare a spherical granular food, surely, by adding a fluid raw material containing an alginic acid salt and lower methoxylated pectin dropwise to a solution of a polyvalent metal salt adjusted to a specific viscosity, thereby gelling the fluid material. CONSTITUTION:The viscosity of an aqueous solution (about 1-2% concentration) of a polyvalent metal salt (e.g. calcium chloride, calcium lactate, etc.) is adjusted to >=30cp with a gum such as xanthane gum. Separately, about 0.3-1.5% of an alginic acid salt and/or a lowly methoxylated pectin is added to an aqueous solution containing sugars such as glucose, proteinous materials such as egg yolk, and oil or fat raw material such as bean oil, and the obtained fluid raw material is added dropwise in the form of granules having a diameter of about 5-30mm. into the above solution of the polyvalent metal salt to effect the gelatinization of the fluid material and obtain the objective granular food consisting of spherical gel. |
