PURPOSE:To enable the preservation of meat for a long period suppressing the discoloration during storage, by packaging the meat together with carbon dioxide gas with a sheet or bag made of a gas barrier material, and storing at a specific temperature. CONSTITUTION:A lump or plural lumps of cattle or fish meat having proper size are packaged with a sheet or bag made of a gas barrier material e.g. a synthetic resin such as polyethylene, etc., or paper such as wax paper, oiled paper, etc. A proper amount of carbon dioxide gas is sealed in the sheet or bag containing said meat lumps, and the meat is stored at a specific temperature. The discoloration of the animal or fish meat during storage can be suppressed, the amount of the waste scrap meat can be decreased, and the meat can be preserved in the packed state for a long period.
