PURPOSE:To prepare a concentrated dressing giving an emulsified liquid having desired taste, flavor and viscosity by proper dilution, by mixing a mixture of vinegar, etc. with a specific amount of a xanthan gum solution, adding an edible vegetable oil thereto, and emulsifying to a simisolid. CONSTITUTION:A mixture of preferably 10-20(wt)% of vinegar, 6-5% of sugar, 2-7% of salt, 0-2% of spices, 0-2% of seasonings and 0-15% of drinking water, is mixed with a 0.5-1.0% solution of xanthan gum as an emulsion stabilizer. The objective concentrated dressing can be prepared by pouring 55-75% of edible vegetable oil to the mixture under agitation, thereby emulsifying the mixture to a semisolid having an acidity of preferably 1-2% and a viscosity of 40-300 poise. |
