PURPOSE:To obtain the titled neutralizing substance F1 as a raw material having high safety inexpensively, by fermenting milk with a mold of Bifidobacterium or lactic acid bacteria, removing protein to be coagulated with an acid from a centrifugal supernatant liquid of the prepared fermented milk, subjecting the residue to salting-out with ammonium sulfate, etc. CONSTITUTION:Milk is fermented with a mold of Bifidobacterium or lactic acid bacteria having ability to produce a substance for neutralizing toxin. The mold and protein to be coagulated with an acid are removed from the fermented milk by centrifugation, etc. The residue is subjected to salting-out with 50% saturated ammonium sulfate, a precipitated fraction is collected, the fraction is subjected to fractionation of molecular weight by gel fitration method, a fraction having >=1.5X10<6>mol.wt. is collected, to give a substance for neutralizing toxin of cholera and toxin of Escherichia coli. F1 is a mixture consisting essentially of glycoprotein and glycolipid, has >=1.5X10<6>mol.wt., content of glycoprotein: shown by the table I , content of protein: shown by the table II, content of glycolipid: 64.8wt%, and stability: shown by the table III. |
