PURPOSE:To obtain the titled compound useful as medicines, etc. industrially, advantageously and easily in high yield, by emulsifying a hydrophobic aldehyde or ketone with a surfactant added thereto or by vigorous physical agitation, subjecting the resultant emulsion to a hydantoin forming reaction, and hydrolyzing the resultant product. CONSTITUTION:A hydrophobic aldehyde or ketone is subjected to a hydantoin forming reaction, and the resultant hydantoin compound is hydrolyzed to afford the aimed amino acid. In the process, the hydantoin forming reaction is carried out by adding a surfactant, e.g. sodium dodecylbenzenesulfonate, or vigorous physical agitation to emulsify the raw material compound. The method has the following advantages; A reaction yield no inferior to that of reaction in a homogeneous system using an organic solvent can be ensured by the above-mentioned method of reaction, and the process is simplified since no recovering operation of the organic solvent is required. The cost therefore can be eliminated.
