PURPOSE:To prepare an oil and fat composition containing a dipeptide sweetening agent and stable to heat and enzyme, by dissolving and mixing solid fat, an emulsifier, a polysaccharide, and a dipeptide sweetening agent under heating, and drying and pulverizing the mixture. CONSTITUTION:(A) 20-60wt%, pref. about 40wt% solid fat having a melting point of >=50 deg.C, e.g. hardened rapeseed oil, rice bran wax, etc., (B) 10-30wt%, pref. about 20wt% emulsifier such as a monoglyceride, a sorbitan fatty acid ester, etc., (C) 10-30wt%, pref. about 20wt% polysaccharide such as waxy starch, glutinous rice starch, etc. and (D) <=30wt%, pref. about 20wt% dipeptide sweetening agent such as L-aspartyl-L-phenylalanine methyl ester, are uniformly mixed and dissolved by heating, and the uniform mixture is cooled, dried, and pulverized. |
