PRODUCTION OF HYDROLYSATE SEASONING

A process for the production of a hydrolysate seasoning which comprises hydrolysing a protein containing material with enzymes which contain proteolytic activities and fiber hydrolysing activities. The hydrolysate may be used as a liquid sauce, a paste or as a dried powder as a base for an aromatisation agent in culinary products.
