PURPOSE:To obtain a food containing high-quality fat and having excellent taste and flavor, by mixing the edible part of a fruit having high fat content homogeneously with separated soybean protein and water, forming the mixture to a sheet having a specific thickness, and heating the obtained sheet. CONSTITUTION:The edible part of a fruit having high fat content, e.g. avocado, olive, etc. and 0.8-1.2pts.wt. of separated soybean protein (in terms of anhydride based on 1pt.wt. of the fat component of the fruit) are mixed with water in an amount to attain a concentration of preferably 12-35wt% (in terms of anhydride). The mixture is formed to a sheet having a thickness of 0.1-2mm., and heated to obtain the objective food. |
