<p>PURPOSE:To keep the freshness of the SAKE lees for a long period without deteriorating the taste and flavor, to enable the dissolution of the SAKE lees easily in use, and to improve the utilization of SAKE lees, by crushing fresh SAKE lees in the form of grains, and storing the lees in a frozen state. CONSTITUTION:Fresh SAKE lees (preferably the one stored for <=1 month after brewing in winter) is crushed, and the granular product is precooled preferably at -25--26 deg.C for 24hr, and stored e.g. in frozen state in a freezing chamber at <=-20 deg.C.</p> |
