PURPOSE:A widely used oil-in-water-in-oil type double-emulsified fat and oil composition useful for spreading, cooking, etc., obtained by adding specific amounts of milk protein and organic acid monoglyceride to a middle aqueous phase. CONSTITUTION:A middle aqueous phase is blended with >=0.05wt% (preferably 0.1-1.3wt%) milk protein such as casein, defatted powdered milk, etc. based on the total composition, and >=0.01g (preferably 0.1-1.0g) organic acid monoglyceride based on 1g milk protein, to give a widely used oil-in-water-in-oil type double-emulsified fat and oil composition useful for spreading and cooking. |
