PURPOSE:To obtain a concentrated glatinous seasoning of flavor containing gelatin of content adjusted to give a gelatinous form according to the characteristics of a commodity in a seasoning consisting essentially of a soup stock, e.g. dried bonito. CONSTITUTION:A gelatinous seasoning obtained by adjusting the gelatin content in a seasoning consisting essentially of a soup stock obtained by extracting a flavor raw material, e.g. dried bonito, etc. with hot water to give a gelationous form according to the characteristics of a commodity, e.g. to form a gel at about 10 deg.C in the case of a commodity for distribution at low temperatures. |
