PREPARATION OF DOUBLE-EMULSIFIED FATTY OIL COMPOSITION

PURPOSE:To prevent an innermost layer fatty oil from intermingling with an outermost layer fatty oil and prepare a double-emulsified fatty oil compsn. with a high productivity, by adding a polyglycerine/fatty acid ester to a fatty oil constituting the outermost layer of an O/W/O double-emulsified fatty oil compsn. CONSTITUTION:An outermost layer fatty oil contg. a polyglycerine/fatty acid ester as emulsifier is cooled rapidly for plasticization and is mixed with a prehomogenized O/W emulsion. A preferred polyglycerine/fatty acid ester is one obtained by condensation of polyglycerine with ricinoleic acid. The emulsifier is added in an amt. of 0.1-5wt% of the double-emulsified fatty oil compsn. When the amount is less than 0.1wt%, no sufficient emulsifying power is obtainable while when it exceeds 5wt%, the flavor of final product is impaired.
