PURPOSE:A stable emulsion for a health drink obtained by emulsifying a mixture of tocopherol with a sugar ester. CONSTITUTION:An emulsion for a health drink, containing tocopherol, and obtained by mixing <=60wt% tocopherol with 0.3-40wt% sugar ester, e.g. sucrose acetate isobutyrate, adjusting the specific gravity, adding 40wt% or more aqueous solution of gum arabic, and emulsifying the resultant mixture. The addition of the emulsion to a drink provides a tocopherol emulsion stable for a long term in the drink. The emulsion is useful as a vitamin E raw material for a drink prepared in use without requiring the stability for a long term, or a drink, e.g. a bottled or canned drink, having the stable emulsion state for a long period without causing any ring nor precipitate as the vitamin E raw material. |
