PURPOSE:To obtain a mold having a high content of lipid useful as a raw material for foods, fats and oils for processing, etc., by cultivating a specific strain belonging to the genus Mortierella in a medium comprising a highly concentrated carbohydrate as a carbon source. CONSTITUTION:A microorganism such as Mortierella isabellina, Mortierella vinacea, Mortierella vinacea, Mortierella ramanniana var. angulispora, or Mortierella nana (e.g., IFO8794) belonging to the genus Mortierella is cultivated in a nutritive medium comprising a highly concentrated carbohydrate (e.g., glucose, or saccharose) as a carbon source by aerated spinner culture, etc. at about 4-6pH for about 2-15 days. The concentration of carbohydrate is properly about 60-400g based on 1l medium. Consequently, a mold with a high content of lipid can be prepared in the medium in high density. The mold is separated from the culture, lipid is collected from the mold by extraction with solvent, etc., so that lipid can be prepared in high productivity. |
