发明名称 PRODUCTION OF SHRIMPLIKE FOOD
摘要 PURPOSE:To produce a shrimplike food resembling natural shrimps having the stiff sense of eating, by moldong a kneaded material of a fish meat, heat-setting food raw material and an adequate amount of an alkali agent, etc., and coagulating the resultant molded material under heating. CONSTITUTION:(A) About 20-50wt% (based on the weight before drying thereof) fish meat, e.g. a pasty ground fish meat, is kneaded with (B) about 5-20wt% heat-setting food raw material, e.g. egg white or starch, (C) about 0.2-2wt% based on the total amount of the raw materials (A) and (B), alkali agent, e.g. sodium hydroxide, and if necessary (D) another accessory raw material, e.g. a seasoning, water or krills ground to particles having about 1-2mm. size, in a Hobart mixer, etc. with deaeration. The resultant mixture is then molded into a desired shape, heat-treated at about 90-100 deg.C for about 30-60min, coagulated and if necessary colored to give the aimed shrimplike food.
