PURPOSE:To produce a liver of an anglerfish resistant to the preservation for a long term, by adding specific amounts of water, SAKE, soy sauce, sweet SAKE and a sweetening agent to the liver of the anglerfish. CONSTITUTION:(A) 0.3-2l water and/or SAKE (preferably a mixture solution of water with SAKE in a high proportion of SAKE or only SAKE), (B) 0.2-1l soy sauce, (C) 0.2-1l sweet SAKE and (D) 60-120g sweetening agent, e.g. sugar, glucose or honey, are added to (E) 2kg liver of an anglerfish, and the mixture is boiled for 15-90min. The resultant liver of the anglerfish is resistant to the preservation for about 5 years in the canned state, about 5-8 months in a refrigerator and about 1 month at ordinary temperature. |
