PURPOSE:To carry out the freeze-drying of noodles, in a short time, preventing the breakage of ingredients with impact, etc., by converting the noodle to alpha- form, and freeze-drying the noodle in the presence of a preliminarily cooked and dried ingredients. CONSTITUTION:Noodles such as wheat noodles, buckwheat noodles, etc. are converted to alpha-form, if necessary immersed in water or hot water, and optionally left at rest for a definite time interval to uniformize the water-distribution in the noodle and obtain boiled and softened noodles. Separately, the ingredients are processed by steaming, boiling, etc., and dried optionally after seasoning. The noodles converted to alpha-form and the ingredients are collected together. The noodles are passed through a tunnel having cold atmosphere to effect the preliminary freezing treatment, and then freezed. The frozen noodles are dried in vacuum to obtain instantly cookable freeze-dried noodles. |
