<p>Appts. for drying e.g. fish meal includes an agitating chamber and a drying tower in which the length of the travel path of material carried in a stream of heated air can be varied to change residence time. The stream pref. passes upwardly in the tower and then downwardly to an outlet, and the path is defined by a series of vertical baffles. - The baffles are pref. aligned in a common plane between inlet and outlet so that the path passes upwardly on one side of the plane and downwardly on the other, the baffles being individually movable out of the plane by a drive which can move the top baffle to an inoperative position so that stream height is changed. The baffles are pref. individually rotatable about a vertical axis. - The method permits residence time to be varied even during continuous operation.
