PURPOSE:To obtain solid mayonnaise being easily packaged, having a wide range of use, by kneading an aqueous solution blended with gelatin and arrowroot starch with a mayonnaise ingredient comprising vitellus, salad oil, and brewed vinegar as main components. CONSTITUTION:Gelatin is blended with arrowroot starch in a weight ratio of about 2:1, and water is added to the blend to prepare about 10-20wt% aqueous solution. A mayonnaise ingredient comprising vitellus, salad oil, and brewed vinegar as main components is separately prepared. This mayonnaise ingredient is kneaded with the aqueous solution blended with gelatin and arrowroot starch, to give the desired solid mayonnaise. The prepared solid mayonnaise has hardness approximately equal to cheese or higher than it, can be packed with a paper product, or crushed into powder. Since water content is low, it has improved decomposition resistance, and can stand long-period of use. |
