摘要 PURPOSE:To avoid contamination by various bacteria, and to prepare a high- quality KOJI efficiently, by using a device wherein a rotary culture bed, means for blending and treating raw materials, air conditioning means, etc. are set in the same cultivating chamber. CONSTITUTION:The cultivating chamber 1 is equipped with the porous culture bed 3 being driven and rotated around the supporting column 1a, the chamber is divided into the upper bed chamber 2a and the lower bed chamber 2b, and the means 4 for operation of piling and discharging of KOJI and the means 5 for operation of treating are vertically movably set on the culture bed 3. By using the above-mentioned device, (i) the first raw material fed from the feed opening 11 onto the culture bed 3 is leveled by the means 4 while air is introduced from the air conditioning means 7 to be controlled by the temperature sensor 9 and the humidity sensor 10 into the chamber, and (ii) the second raw material and a KOJI mold are fed from the means 12 and the machine 13 to the chamber. As air conditioned by the heating and cooling means 14 controlled by the temperature sensor 18 is circulated through the cultivating chamber 1, the KOJI substrate 17 is blended with stirring by the means 5, to give a KOJI.
