PURPOSE:To prepare the titled lustering agent capable of imparting pretty luster to the surface of a baked cake for a long period, and preventing the lowering of the surface strength by its excellent adhesivity, by compounding an oil or fat containing an oleophilic emulsifier with specific saccharides and other saccharides, and pulverizing and kneading the composition. CONSTITUTION:The objective lustering agent can be prepared by compounding (A) 15-35wt% of an oil or fat containing an oleophilic emulsifier (e.g. lecithin) (preferably palm oil, etc.) with (B) 2.5-20wt% of sorbit and/or 2.5-20wt% of fructose and/or 5-40wt% of maltose and (C) 20-70wt% of saccharides other than the component (B) (e.g. glucose), and pulverizing and kneading the obtained composition preferably by rolling twice or more.
