PURPOSE:To prepare a starter of lactic acid bacteria useful for producing cheese, yogurt, etc., having high activity and a large number of molds, in an extremely short time, by subjecting lactic acid bacteria to subculture at the last period of logarithmic growth phase. CONSTITUTION:Lactic acid bacteria are cultivated, and subjected to subculture in a new medium when it reaches the last period Z of logarithmic growth phase. Lactic acid bacteria are subjected to subculture again at the last period of logarithmic growth phase in a new medium, and preferably it is used as a starter at the last period of third growth phase. |
