PURPOSE:To obtain the titled raw MISO (fermented bean paste) having soft taste and suitable also for Western cooking, by adding curry powder, chicken powder, seasonings, and dissolved skim milk to raw MISO, mixing the product, and heating and cooling the mixture, and if necessary, adding alcohol to the mixture after cooling. CONSTITUTION:Raw MISO (preferably a mixture of 1pt. of white MISO and 4.5pts. of raw rice MISO) is mixed with curry powder, chicken powder, seasonings and skim milk dissolved in water, and the mixture of raw MISO is stirred, heated preferably at 74-78 deg.C, cooled to preferably 30 deg.C, and if necessary, added with alcohol after cooling to obtain the objective raw MISO. When it is not necessary to preserve over a long period, the addition of alcohol may be omitted. USE:Soup and MISO soup for children who dislike MISO soup. |
