A process is described for preserving, or protecting, plant- or animal-derived stored products, in particular foodstuffs, preferably animal feeds, against harmful microorganisms, such as yeasts, bacteria and, above all, moulds, by using a 2-cyano-2-[(2-cyanomethoxy)imino]acetic ester of the formula I <IMAGE> in which R represents a C2-C8-alkyl group which is unsubstituted or mono- or polysubstituted by halogen or cyano or interrupted once or more than once by oxygen; a C3-C6-alkenyl group which is unsubstituted or mono- or polysubstituted by halogen; a C3-C6-alkynyl group which is unsubstituted or mono- or polysubstituted by halogen or a C1-C3-alkyl group which is substituted by phenyl, the phenyl moiety being unsubstituted or mono- or polysubstituted by halogen, nitro, halo-(C1-C3-alkyl), C1-C4-alkyl or C1-C4-alkoxy.
