A cutting machine for foodstuffs, especially for meat, sausage, bacon and the like, is provided with a feed device (2) for the material (3) to be cut, a cutting chamber (4) which is provided with a cutting slit (12) extending at right angles to the feed device to permit the passage of a cutting knife (1), and a control device (6) which controls the feed device (2) and is connected to a control and/or regulating unit (10). An hold-up (14) for the cut material, which is displaceable in the cutting chamber (4) between the cutting slit (12) and the rear end of the cutting chamber (4), is designed as a control element for the start of the cutting processes. To this end, the hold-up (14) can be connected to the control device (6) for the feed device (2) via a position indicating unit (17, 18) and the control and/or regulating unit (10). <IMAGE>
