PURPOSE:To prepare a potato cake having the same palatability as a rice cake, and useful as a health food, by adding potato starch to washed, skinned and steamed potato to attain a desired water-content, stirring and mixing at high temperature under a high-speed mixing action, and forming the obtained mixture. CONSTITUTION:A washed and skinned potato is steamed at 90-105 deg.C for 30- 60min, and optionally strained. 100pts.wt. of the potato is added with 5-40pts.wt. of potato starch to attain a water-content of 64-72%, and stirred at a high speed keeping the temperature to >60 deg.C to obtain the objective potato cake. The obtained potato cake is maintained at >40 deg.C and formed. |
