PURPOSE:A beverage that contains alpha-glucosylisoflavonoid, but being free from its bitterness, astringency and acridness, is thus used advantageously to increase, keep and recover health. CONSTITUTION:An alpha-glucosyl transferase such as originating from an animal e.g., from liver of pigs or from a plant such as buckwheat seeds, from fungi in, e.g., mucor or penicillium or from yeast, e.g., Saccharomyces, is made to act on an aqueous solution containing isoflavonoid originating from soybeans and an alpha-glucosyl saccharide such as partial hydrolyzate of starch or sucrose. Then the resultant alpha-glucosylflavonoid is used to prepare the objective beverage. The resultant beverage is free from bitterness, astringency and acridness caused by the isoflavonoid and readily converted into the original isoflavonoid by the action of alpha-glucosidase in vivo. Therefore, it is used for the increase, maintenance and recovery of health with no anxiety of toxicity and side-effects. |
