PURPOSE:A mix for soft cream, obtained by incorporating a gelatin having a specific jelly strength and pectin in place of a milk component as a creamy feeling imparting agent therein and capable of giving the soft cream having a refreshing sense of eating and creamy texture. CONSTITUTION:A mix for soft cream obtained by incorporating an amount (y) expressed by formula I {y is the amount (wt%) of gelatin incorporated in the mix; x is the jelly strength [Bloom number (grams on the Bloom basis of the gelatin]} and formula II of gelatin having 80-300 grams (Bloom number) jelly strength on the Bloom basis in preparing the mix for the soft cream by incorporating the gelatin and pectin in place of a milk component as a creamy feeling imparting agent and if necessary a sweetening agent of sugar, glucose or thick malt syrup sugar, fruit juice of blueberries, a polysaccharide paste, e.g. guar gum, and a hydrolyzed vegetable protein.
