The mechanism for removing the skin comprises a fillet supply conveyor to a skinning cylinder, a blade of tangential thereto, and a pressure roller to hold the fillets with the skin in contact with the blade edge. - Dia. of the pressure roller does not exceed 35 mm. (instead of the usual to 40-60 mm.). Roller is pref. carried between the ends of two swivel levers which are subject to an adjustable spring force. A cylinder with spring-loaded ribs may be arranged immediately downstream of the roller to draw the fillers away as they are skinned.
