PURPOSE:To improve the defoaming property of an anti-foaming agent for bean curd, by adding a specific amount of a glycerol monofatty acid ester to an anti- foaming agent containing a glycerol fatty acid ester as a main component. CONSTITUTION:For example, a hardened beef tallow is made to react with glycerol, and distilled to obtain a glycerol fatty acid ester containing >=90% of glycerol monofatty acid ester. The anti-foaming agent for bean curd has excellent defoaming effect to soya milk, and enables the production of a high-quality bean curd. |
