PURPOSE:To prepare gallic acid in high yield easily and continuously, by hydrolyzing tara tannin using a specific spore of Penicillium chrysogenum as a biocatalyst. CONSTITUTION:In preparing gallic acid by hydrolyzing tara tannin anaerobically, a spore of Penicillium chrysogenum included and immobilized to an alginate, preferably aluminum calcium alginate is used as a biocatalyst. By this method, hydrolysis of tara tannin is advanced at normal temperature or a temperature close to it, and it can be carried out without adding an agent such as an acid, alkali, etc., so that gallic acid, a reaction product, is separated and purified with a fewer steps, and gallic acid can be prepared easily. Since the biocatalyst is stable and has high activity, strict pH control is not required as needed in a conventional procedure, the reaction temperature is approximately normal temperature and gallic acid can be prepared in high yield.
