PURPOSE:The titled emulsifier having high safety and excellent emulsifying force and imparting excellent emulsion stability over a long period of time, constituted of sorbitan fatty acid ester containing a large amount of 1,4-sorbitan fatty acid monoester consisting of a hydrophilic part and an oleophilic part. CONSTITUTION:A water in oil type emulsifier comprises sorbitan fatty acid ester containing 40wt% or more of 1,4-sorbitan fatty acid monoester wherein its hydrophilic part comprises a 1,4-sorbitan residue and its oleophilic part comprises a 12-24C saturated (straight chain or branched chain) or unsaturated fatty acid residue and has capacity for imparting extremely excellent emulsion stability over a long period of time. As the above mentioned saturated straight chain fatty acids, lauric acid, myristic acid, palmitic acid, stearic acid or behenic acid can be used and, as the saturated branched chain fatty acid, isopalmitic acid, isostearic acid or 2-octyldodecaic acid can be used and, as the unsaturated fatty acid, oleci acid or palmito-oleic acid can be used.
