PURPOSE:To prepare an instant solid MISO (fermented bean paste) which is a porous roux containing moderate amount of water and is easily soluble, storable, usable and transportable, by humidifying freeze-dried raw MISO. CONSTITUTION:Raw MISO is freeze-dried by a conventional method and humidified to attain an intermediate water content, preferably a water-content of 6- 13wt%, especially 8-10wt% based on the total solid content. As an alternative method, powdery MISO prepared by the conventional method is kneaded with a binder such as gelatin, agar, etc. and if necessary an oil or fat to attain the above-specified water-content. |
