PURPOSE:Aging treatment is effected in any stage of raw noodle production to produce instant dried noodles which are uniformly dried in each part without cracking and show high swelling and good restoration. CONSTITUTION:In any stage of raw noodle production, aging treatment is effected, preferably at 20-35 deg.C for about 10-30min to give raw noodles of more than 35% water content. After they are boiled or not, the raw noodles are dried with hot air of 120-350 deg.C for 3 or 180sec. |
