The cryogenic freezer includes a baffle(66, 68) extending between an inlet(17) and an outlet(19) of an elongated tunnel(10). A porous cenveyor(32) extends through a lower chamber(74, 76) defined by the baffle in the tunnel, the baffle being vertically movable w.r.t. the conveyor. The height of the baffle may be adjusted by supporting it on stacked spacers(80), or the baffle may be moved up or down by pivoting hinged plates(62, 64). The distance between the baffle and conveyor can be adjusted to freeze products of different heights.
