PURPOSE:To produce threonine useful as pharmaceutical, food additive, etc., without necessitating a purification process, by masking iminodiacetic acid and nitrilotriacetic acid with a metallic compound in the reaction of crude glycine with acetaldehyde. CONSTITUTION:Threonine is produced by the reaction of crude glycine containing iminodiacetic acid and nitrilotriacetic acid as impurities of glycine, with acetaldehyde in a basic medium. In the above process, the iminodiacetic acid and nitrilotriacetic acid in the crude glycine are masked with a metallic compound capable of forming glycine metal complex (e.g. element of copper-group, iron- group or platinum-group metal, i.e. Cu, Ni, Co, Pd, etc.). The amount of the metallic compound is less than the stoichiometric amount to form the glycine metal complex.
