<p>A prod. having an active immobilised enzyme (I) as part of an external gel deposit on an inert support is new. Pref. the deposit represents at least 3, esp. of the total vol., and can be either a continuous matrix enclosing the support, or a discontinuous or irregular coating. It pref. contains 50-95% water, the balance being immobilised enzyme solids. (I) is esp. a saccharifying enzyme and the support is bone char. Also new are enzymatic conversion methods using these prods. - Method is esp. used to immobilise amyloglucosidase (I') used to prod. glucose from starch. The gel is strong and shear-resistant, and rapid attrition of the layer during use does not (pref. enzyme half-life is over 10 days.) The bulk volume of the prod. is 5-300% greater than the bulk volume of the bore char. - Prepn. of prod. comprises (i) mixing water miscible organic solvent with inert insoluble solid particulate support material; (ii) mixing with aq. soln. of enzyme contg. at least 25% dissolved enzyme prepn. solids so as to load support to saturation with enzyme and (iii) contacting enzyme loaded support with amt. of crosslinking agent enough to cross link and insolubilise enzyme on support material as gel. - Prods. can be used to effect enzyme-mediated conversions of substrate.
